Communal dairy of Peio

The dairy, which uses traditional methods, is a room with 3 copper bowls, a room with tanks for the separating of cream, one for brine and the storage room.

At Piazza San Giorgio 2 is the last shared-use dairy in Trentino still in operation today. The cheese-maker each day produces "casolét" and butter with milk from the cows kept in the village. Each "caserada", i.e. the product processed in a day, is owned by one of the members of the dairy, in turn. The number of "caserade" which each member has is proportional to the amount of milk given. The Pejo communal dairy is part of the Eco-museum of the Pejo Valley.
